For the Filling:
Rinse the lentils and place them in a pot with the vegetable broth. Bring to a boil, reduce heat, cover, and simmer for 20-25 minutes or until the lentils are tender and the liquid is absorbed.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until they begin to soften.
Add the minced garlic, mushrooms, and diced bell peppers. Cook for another 5 minutes until the vegetables are tender.
Stir in the frozen peas, tomato paste, smoked paprika, cumin, salt, and pepper. Cook for a few more minutes until the vegetables are heated through.
Add the cooked lentils to the vegetable mixture and stir to combine. Adjust the seasonings if needed.
For the Mashed Sweet Potato Topping:
In a large pot, place the peeled and chopped sweet potatoes. Cover them with water and bring to a boil. Reduce heat and simmer for 15-20 minutes or until the sweet potatoes are soft and easily pierced with a fork.
Drain the sweet potatoes and return them to the pot.
Add the almond milk and vegan butter to the sweet potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
Preheat your oven to 375°F (190°C).
Transfer the lentil and vegetable mixture to a baking dish or a deep pie dish.
Spoon the mashed sweet potatoes on top of the filling. Use a fork to create a decorative pattern on the surface of the mashed sweet potatoes.
Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the top is golden and the filling is bubbling.
Let it cool for a few minutes before serving.
